Vermont Spirits is a Vermont-based distillery that makes Vermont Gold and Vermont White vodkas. Being that milk and maple syrup are the state’s biggest industries it’s only natural that’s what they use it in their spirits. The Limited Release vodka is similar to the Vermont Gold in that it uses maple tree sap but it will utilize the early run sap that is released in the early spring and the tree sheds itself of the starch stores from the winter. This early run sap is light and has a delicate flavor and in order to produce one bottle of vodka you need the early sap from one whole tree. Likewise, this Limited Release is made up of 1,000 hand-numbered 375ml bottles of spirit and will be available at retailers in New York, Massachusetts and Vermont. $45.
